Sorgínzulo (4.5★, 3,759 reviews) is shoulder-to-shoulder by 8pm. Café Bar Bilbao has been doing it since forever (4.4★, 3,612 reviews). The routine: point, eat, move on, count toothpicks to pay. €2-4 per pintxo. Order a txakoli and watch them pour it from height.

Abando. Restaurante Amaren (4.6★, 8,598 reviews) is the volume leader. Restaurante Viña del Ensanche has 5,324 reviews and does formal Basque dining. Nerua Guggenheim Bilbao is the museum restaurant worth the price. Casco Viejo's Víctor Montes (4.4★, 4,548 reviews) has been doing sea bass and txuleta for decades — more character, less polish.

Abando. Ramen Shifu (4.8★, 1,508 reviews) — the broth is rich, not watery, and locals queue for it. Restaurante Uarike Bilbao does Peruvian (4.6★, 1,734 reviews). Basuki covers Asian (4.4★, 2,022 reviews). Abando has the range — Casco Viejo is almost entirely Basque.

Miribilla has a full ranked Hot List — 34 venues tracked, 15 ranked. Dando la Brasa (4.4★, 1,559 reviews) and Tolón-Tolón (4.7★, 935 reviews) do serious grilled meat. Bihotz (4.7★, 1,180 reviews) is the craft beer spot. Atxuri is thinner — 3 qualifying venues east of the old town. Arandia de Julen (4.6★, 813 reviews) is the one worth the walk. DOW tracks both.

Walk past the seafront restaurants two streets back. Same catch, half the bill. Open 8am-2pm weekdays, 9am-2pm Saturdays. Closed Sundays.

Casco Viejo for pintxos — Café Bar Bilbao (4.4★, 3,612 reviews), order standing, eat, pay €12 with a drink, out in 45 minutes. Then Bacaicoa taberna (4.5★, 1,070 reviews) next door. Abando if you want to sit down — Bilbao Berria Ledesma (4.4★, 3,275 reviews) is quick and good.
