The room is intimate — a chef's counter and around a dozen seats — which means the team can actually look after you, and they do. The kitchen fuses Italian technique with Alentejo ingredients, and the results are the kind of thing people are still thinking about back at the hotel: the carbonara made with Portuguese guanciale, a ragù that earns its own conversation, and a French toast that closes the meal better than most desserts have any right to. Local and natural wines feature throughout, chosen with obvious knowledge. Reservations before you go — this is not a place that absorbs walk-ins gracefully.
